For 4 servings, you must:
- fish fillet - 400 gr. (you can use any fish, even red);
- eggs - 2 pcs.;
- milk - 1 glass;
- wheat flour - 2 tbsp.;
- butter - 20 gr.;
- sour cream - 2 tbsp.;
- cheese - 50 gr. (you can take more);
- Fresh herbs - to taste.
Getting down to cooking
Cut the fish fillet into slices. Pour some water into the bucket and put fish in it. Cook it over low heat for 5-7 minutes. Then the fish must be cooled and passed through a meat grinder. You can also use a blender. Heat milk, but do not boil. Add flour to it, mix until smooth, pour sour cream. The sauce turned out.
Separate the whites from the yolks and beat in a thick foam. Put the fish in a pan, add softened butter, yolks and mix everything. Next, carefully introduce the protein foam and mix gently. Put the resulting mass into a pan or pan with a removable handle, pour the sauce cooked earlier and sprinkle with grated cheese. Bake in an oven preheated to 180-200 degrees until a beautiful crust is formed. Ready-made fish pudding can be sprinkled with fresh herbs and served both hot and cold.
