Ingredients for Toffee Sauce:

  • Icing sugar - 350 g;
  • Whipped cream - 400 g;
  • Light fruit syrup - 2 tablespoons;
  • Cocoa powder - 3 teaspoons;
  • Soft butter - 20 g;
  • Vanilla Sugar - 5 g.

Cooking:

  1. To bake profiteroles, you need to put the oven at 200 degrees and leave to warm up. Lubricate the surface of the pan with a tablespoon of butter.
  2. Prepare the dough for profiteroles. Bring the water to a boil, put in water 100 g of butter softened with a fork. Pour the sifted flour into the mixture. Stir the mixture with quick movements. The mass should be well behind the walls of the bowl. Remove from heat and mix continuously for a couple of minutes. Then cool the dough mix and add eggs to it. Stir the dough.
  3. Put the dough in a cooking bag and squeeze 35 small rolls onto a greased baking sheet. Buns should be baked in the middle of the oven, about 10 minutes. The bun dough should rise, double in size and become rosy.
  4. Now you need to make toffee. Mix sugar, cream and cocoa powder in a pan. Pour the syrup into the mixture. Bring the mixture of toffee to a boil, the sauce must be constantly stirring. Reduce the fire to the smallest. After that, cook the sauce for another 20 minutes. Toffee sauce should turn slightly golden in color and thicken.
  5. Remove the pan from the heat. Combine the resulting sauce with butter, mix. Add vanilla sugar to taste. While the sauce is cooling, it needs to be stirred.
  6. In the resulting buns make cuts and fill them with ice cream. Place profiteroles on a serving plate in the form of a slide. Pour the pyramid with toffee sauce.
