It is no exaggeration to call the Italian pie called "Pastiera" fabulously delicious. Delicate shortbread dough goes well with cottage cheese, and candied fruits add a unique touch to pastries.

  • - flour - 400 g;

  • - sugar - 150 g;

  • - salt - a pinch;

  • - baking powder for dough - 11 g;

  • - eggs - 2 pcs.;

  • - egg yolks - 4 pcs.;

  • - starch - 2 tablespoons;

  • - vanillin - 0.5 teaspoon;

  • - milk - 200 ml;

  • - cottage cheese - 400 g;

  • - zest of one lemon;

  • - cinnamon - 0.5 teaspoon;

  • - candied fruit - a handful.

So, combine wheat flour with baking powder, that is, baking powder for dough, and salt. Sift this mixture several times into a sufficiently deep bowl. Then add 100 grams of granulated sugar, vanillin and 140 grams of butter. The oil must always be cold. After turning the resulting mass into crumbs, introduce raw chicken eggs into it, then knead the dough, uniform and rather soft to the touch.

Cut the dough into 2 pieces and each roll into a ball shape. Wrapping the dough with polyethylene or cling film, send it for a while in the refrigerator.

Mix 50 grams of granulated sugar with two egg yolks. Thoroughly grind this mixture, and then introduce starch into it together with two tablespoons of wheat flour. Then add to the resulting mass milk, which is certainly hot. Do not forget to stir the mixture.

After adding hot milk, let the resulting mixture stand for a minute, then add the remaining butter into it. Heat this mass on low heat for 3-5 minutes. After removing from the stove, mix it with grated lemon zest, cottage cheese, as well as the remaining egg yolks, ground cinnamon and chopped candied fruit. Mix everything properly. The filling for the Pasteur pie is ready!

Remove the dough from the refrigerator and roll one part so that it matches the size of the baking dish. Also do not forget to form low sides for the pie.

Having laid the filling in the baking dish, cover it with strips of the same size cut from the second part of the dough. Lay out the strips so that they are intertwined. In this form, bake the cake at a temperature of 170 degrees for 60 minutes.

After cooling the pastries completely, place them in the refrigerator for at least 12 hours. Pie "Pastier" is ready!
