Okroshka is a wonderful summer first course. It is prepared very simply, but most often it is based on kvass. However, as a basis for okroshka, you can choose another, for example, tomato juice, prepared in a special way.

You will need

  • - 3-4 potatoes;

  • - 2 carrots;

  • - 2 eggs;

  • - green onions;

  • - 1 fresh cucumber;

  • - 2 salted or lightly salted cucumbers;

  • - cooked meat;

  • - salt;

  • - 800 ml. tomato juice;

  • - 200 ml. brine;

  • - ground red pepper or Tabasco sauce;

  • - mustard;

  • - sour cream.

To begin with, we will prepare all the ingredients for this delicious dish. Wash the green onions and chop them finely. Onions need to be peeled, washed and finely chopped in the same way.

Potatoes with carrots must first be boiled until cooked. Then let them cool, peel (if you boiled them in a peel) and also finely chop.

Let’s take for the cucumbers. Both fresh and pickled cucumbers will go to this dish. They need to be cut into small cubes.

Cooked meat, cooked sausage, heart - you can use any similar product, depending on what is currently available in the refrigerator. Cut like all previous components into cubes.

The last product that goes into our dish is eggs. Hard boil them, peel them and finely chop.

Mix all the ingredients, add salt to taste.

At the next stage, prepare a filling for okroshka, based on tomato juice. To do this, combine tomato juice with brine from lightly salted or pickled cucumbers. Add the juice of half a lemon and a little bit of Tabasco sauce. If you don’t have one, you can replace the sauce with red hot pepper.

After cooling, the okroshka on tomato juice is ready for use.
