Sea trout, or trout, belongs to the salmon family. It is a red fish high in omega-3 fatty acids, vitamins A, D and B12. It is perfect for baking, boiling and salting. Scientists have found that the inclusion of red fish in the diet reduces the risk of cancer and hypertension, improves memory and eliminates depression.

You will need

    • For dry salted trout:
    • 1 kg of fish;
    • 2 tbsp. tablespoons of salt (without top);
    • 1 tbsp. a spoonful of sugar (without top);
    • ground pepper;
    • dill.
    • For finnish trout soup:
    • 500 g fillet of sea trout;
    • 4-5 pieces of potatoes;
    • 1 head of red onion;
    • 400 ml of milk 6%;
    • 1 tbsp. a spoon of flour;
    • ground white pepper;
    • greens;
    • salt;
    • a few drops of lemon juice.
    • For trout with fruit sauce:
    • 250-300 g fillet of sea trout;
    • 1 orange
    • 0.5 cup chopped pineapple;
    • 1 teaspoon of honey;
    • 1 tbsp. a spoonful of lemon juice;
    • 2-3 cloves of garlic;
    • 2 tbsp. tablespoons of olive oil;
    • 2 tbsp. tablespoons of soy sauce;
    • 1 teaspoon tomato paste;
    • salt;
    • spices to taste.

Dry salted trout. Clean fish from scales, wash and dry well with a paper towel (this is very important). Mix the salt and sugar in a bowl and rub the fish on all sides with this mixture. If desired, you can pepper it slightly (white and black ground pepper are good for this), as well as sprinkle with dry dill and coriander.

Put the fish in a clean bowl, cover with a napkin and refrigerate. Turn the trout once a day so that it is well salted on all sides. After four days, dry salted fish will be ready. Cut it into fillets. To do this, cut along the ridge, remove the bones and cut the trout into portions.

Finnish trout soup. Peel potatoes, wash and cut into large cubes, about two to two and a half centimeters. Peel and chop the onions into thin half rings. Pour a liter of water into the pan, put on fire, add salt and boil. Then dip the vegetables in it and boil for ten minutes.

Cut the trout into large pieces and add to the vegetables. Pepper and drip a few drops of lemon juice and cook for another ten minutes. Pour flour into milk, mix thoroughly until smooth. Pour the milk mixture in a thin stream into the soup, stirring continuously. Bring it to a boil and remove from heat. Wash and finely chop the greens. Add it to the soup plates before serving.

Trout with fruit sauce. Add prepared trout fillet pieces with salt, pepper, drizzle with lemon juice and set aside for fifteen minutes. Preheat the oven. Lubricate the baking dish with butter, put the fillet (lay it so that there are no voids). Sprinkle the trout a little with olive oil and put in the oven for ten minutes.

Squeeze the juice from the orange, mix it with lemon, pour it into a small saucepan or pan and put on fire. Bring to a boil and cook over medium heat for about three minutes. Juice should boil a little. Cut the pineapple into small cubes (you can use fresh, frozen or canned pineapple) and add it to the juice along with the garlic passed through the press. Put honey, soy sauce, tomato paste and pepper. Mix all the ingredients well, bring the sauce to a boil and simmer for two minutes on low heat. Remove the trout from the oven, pour the sauce into it and put it back in the oven for about five minutes. Boiled rice is ideal for garnish with trout in fruit sauce.

Sea trout is considered oily fish. Therefore, it is not recommended to use it in large quantities for people with peptic ulcer of the stomach and duodenum, with chronic diseases of the liver and gastrointestinal tract.

Useful advice

Sea fish cooks very quickly, while retaining all the beneficial properties. The main thing is not to overdo it on fire. From prolonged heat treatment, it becomes dry.
