Kurnik is a traditional pie of Russian national cuisine, consisting of many ingredients. The kurnik recipe is centuries old and today has many options. Slavic chicken pie was usually baked as a sign of love and fidelity to the wedding. If you want to make a kurnik according to the classic recipe, then be patient.

Carefully follow all stages of the preparation of the kurnik. First you need to make the dough for the main part of the pie. To do this, warm a glass of milk a little and add yeast. Wait for the yeast to dissolve completely by stirring with a whisk.

Beat one egg with sugar and salt separately, and then pour into the milk with yeast. Next, melt the butter in a water bath and add to the main mixture. Shuffle. Pour 470 g of flour gently and knead the dough. Leave to insist for a couple of hours.

The next step is making pancakes. Mix the remaining milk, sugar, salt, egg and 10 g of vegetable oil. Stir, add 100 g of flour and mix thoroughly again so that all the lumps are dispersed. Bake 6–9 pancakes in a pan. These will be the layers inside the henhouse.

Next, make the mushroom stuffing. To do this, wash and chop the mushrooms with a knife, cut the onion into small pieces. Fry everything in oil. Salt and pepper at the end.

The second filling is prepared from cooked rice and eggs, which should be pre-chopped. Stir the ingredients and salt.

The third filling is a combination of chicken, greens. Remove the skin and bones from the meat in advance, divide the chicken into fibers using your hands. Finely chop the parsley and dill and mix with the chicken.

Start spreading the kurnik. Roll out a portion of the yeast dough in the shape of a circle and put in a greased form. Next, put a layer of mushroom filling. Top with pancake. The next layer is chicken with greens, which is also covered with pancake. The last layer is rice with eggs. Alternate the layers until the pancakes run out.

From the remaining yeast dough, roll out the layer for the top of the chicken pot. Cover all layers and form side walls. Thoroughly fasten the test joints. Make any figures from the dough and decorate the cake. Brush with beaten yolk and place in the oven for baking. After 20-35 minutes, the chicken will be ready.
