    • 8 strips of raw smoked bacon (optional).

Wash the chicken carcass well. Remove the hemp feathers and trim the excess fat. Rub chicken inside and out with salt and ground black pepper. Cover it or wrap in cling film and refrigerate for 3-4 hours to soak the meat.

Boil water in a large pan, add salt. Put in it peeled potatoes, a head of garlic and a whole lemon. Boil it all for about 10-12 minutes. After this, drain the water and get the lemon and garlic, laying them aside for now. Return the potato pan to a small fire to allow excess moisture to evaporate, but be careful not to start burning. Turn off the heat and put the potatoes in a warm place.

Puncture a hot lemon with a knife in several places. Do this carefully so as not to burn or cut your hands. Remove the chicken from the refrigerator. Wash it with a paper towel and rub it with olive oil. Inside the carcass, put the whole boiled garlic, chopped lemon and thyme. Preheat the oven to 190-200 degrees. Lubricate the baking dish with butter, put the chicken in it and set to bake for about 45 minutes. Take out half the cooked chicken and transfer to a dish.
