In general, tzachton is prepared from three ingredients. These are yogurt, cilantro and garlic. At the end of cooking, the sauce is salted and flavored with uchi-suneli. It is quite possible to replace matzoni with sour cream of 25% fat, and in addition to sauce, to add more piquancy, you can add red hot pepper and grated walnuts. Cilantro and garlic are essential and indispensable components. If you don’t like cilantro, still try making tzachton and you might love cilantro.

First prepare the garlic. It must be cleaned and ground with a very sharp knife or use a garlic press. Garlic should turn into gruel.

Next, with a sharp knife, very finely chop the washed green cilantro. You can even wipe all the ingredients with a blender again at the end of cooking.

Mix sour cream with cilantro and garlic. Add the pounded hot red pepper, optionally, salt the sauce and put the pounded in the uchi-suneli mortar. This spice is hard to find, as it is not sold in ordinary stores. You can search for ucho-suneli in the shop of oriental spices merchants in the market or, in extreme cases, replace the hops-suneli.
