  • - salmon fillet - 250 g;

  • - potatoes - 2 pcs;

  • - cream with a fat content of 20% - 250 ml;

  • - dry white wine - 100 ml;

  • - celery - 1 petiole;

  • - leek - 1 stalk;

  • - water - 1.2 l;

  • - onions - 1 head;

  • - bay leaf - 1 pc;

  • - pepper;

  • - salt;

  • - butter - 30 g.

So, the first thing to do is to thoroughly rinse the salmon fillet and cut it into pieces.

Pour water into a saucepan, salt it and boil it. Then put the chopped salmon fillet in boiling water, and pour white wine into the same container, add pepper and bay leaf. Bring to a boil and cook for another 10 minutes over low heat. After time, remove the pan from the heat, remove the fish, and strain the broth.

Now you need to wash and chop the celery and leek. Remember that only the white part should be cut off from leeks. Peel the onions and potatoes and cut them into cubes.

Melt the butter in a pan and fry the following ingredients in it: onions, leeks and celery. After 5 minutes, add the potatoes and fry for another 2 minutes. Put the resulting fry in a pan, then pour the salmon broth into it. Boil the soup for about half an hour.

After the soup has boiled, cool it and grind it using a blender to a puree state.

From the blender, pour the soup into the pan again and add the cream into it. Then put the dish in the refrigerator for 2 hours. Cold salmon soup with leek is ready!
