Guryev porridge is a dish that was served at the table in the families of emperors. It is prepared from semolina with the addition of milk, cream, candied fruit, nuts or dried fruits. Nowadays, it is suitable for those who do not like ordinary semolina porridge.

To prepare porridge you will need:

- milk - 1 liter;

- semolina - 3/4 cup;

- salt - 1/4 tsp;

- sugar - 2 tbsp. l;

- walnuts - 1/2 cup;

- candied fruit - 1/2 cup;

- butter - 3 tbsp. l;

- vanillin - 1/4 tsp;

- eggs - 4 pcs.

First we cook thick semolina, for this we bring the milk to a boil and slightly add salt. Mix semolina with sugar and pour in a thin stream into boiling milk, stir, without stopping, so that lumps do not form. Cook the cereal until tender, it will take about five minutes.

While the porridge cools, chop the walnuts and fry them in a dry pan, cut the candied fruit into small pieces. In the chilled semolina, put the melted butter, vanillin, candied fruits and nuts, mix.

In eggs, we carefully separate the proteins from the yolks. We put the proteins in the refrigerator to cool, and pour the yolks in a saucepan with porridge. Beat the cooled proteins in a strong foam and carefully mix them into the porridge.

Portion forms (muffins or coconut molds are perfect) are greased with vegetable or butter, put our porridge in them and sprinkle with sugar slightly. Preheat the oven to 180-190 degrees, place the molds in it and bake until the sugar is caramelized. We take out of the oven, cool a little and serve.

Candied fruits and nuts can be replaced with fresh or canned berries, dried fruits or syrup.

Such porridge will please not only small sweet tooth, it will be enjoyed by adult family members as well.
