You will need

Peel potatoes and onions. Wash the eggs under running water.

We rub the potatoes on a coarse grater, since when using just a coarse grater, the potato gives less juice. Plus, due to the roughness of the edges, they turn out to be especially crispy.

Rub onion on a coarse grater or finely chop it.

Mix all the ingredients: break the eggs into grated potatoes; add onion, flour and salt to taste.

Heat the pan. Pour in vegetable oil for frying.

Spread the dough with a tablespoon. One potato pancake - one tablespoon without edges. Distribute the dough evenly. The ideal layer thickness is not more than 1 cm.

Fry potato pancakes until a brown crust forms on both sides over medium heat.

Ready-made pancakes are best served with sour cream. You can decorate with greens.

Draniki is best done with a thickness of not more than 1 cm, so they are better fried and will be as crispy as possible. If the potato is “watery, ” it’s best to drain the excess liquid.
Useful advice
Grate the onion on a coarse grater. Advantages: 1. Onion prevents the darkening of potatoes and potato pancakes are obtained not gray, but a pleasant golden color. 2. The pieces are medium-sized, uniform and it will be easy to squeeze out the excess liquid. The only negative: who has particularly sensitive eyes - this method is better not to use and replace with a small shredder with a knife.
