Cooking Homemade Brown Bread

You will need sourdough to make this bread. Despite the fact that yeast is added directly to the dough, it is used anyway, mainly for flavor.

For starter culture, the following is required:

- 370 g of coarse rye flour;

- 370 g of purified water;

- 20 g of yeast.

Other ingredients for making homemade brown bread include:

- 283 g of rye grains (for them an additional 283 g of water);

- 243 g of coarse rye flour;

- 30 g of water;

- 17 g of salt;

- 56 g of sunflower seeds;

- 6 g of instant yeast.

Make the starter culture of these ingredients and leave it for a day at room temperature. Remember that to make bread at home, you must use water that does not contain chlorine.

Combine rye grains and water in a separate bowl. If you purchased whole grains, place them in a blender or coffee grinder and grind for 30 seconds. During this period of time, they will not be crushed into flour, but simply crushed into pieces. Leave the grains in water at room temperature for 16-18 hours.

After the indicated time, mix the starter with the rest of the dough ingredients and mix thoroughly. Add all other ingredients, including sunflower seeds and soaked rye grains, knead the dough for about 10 minutes. Then leave it for 10 minutes in the room, and then smooth it again (it will change shape due to the growth of yeast).

Form a loaf and place it in a mold well oiled and sprinkled with flour. The dough for brown bread is very sticky, so carefully sprinkle with flour all the surfaces that come into contact with it, as well as your hands.

Cover the loaf in the mold with a layer of flour, cover with plastic wrap and let the bread rise for an hour in a warm place. It will seem strange, but the bread at this stage will grow a little.
