Put dried mushrooms in a sieve and rinse thoroughly under running water. Pour the mushrooms in a bowl with cold water. Let them stand and swell for 3 hours. Carefully drain the infused dark water into a saucepan through a sieve. In this water you will boil mushrooms. At the bottom of the bowl will remain sediment that can be thrown away.

Chop the soft mushrooms and put in a saucepan. Set to cook for 45 minutes. Finely chop the onion and fry in oil. Transfer to mushroom broth. The broth should be simmering. Peel a couple of potatoes. Dice and put in mushroom broth. Cook for 15 minutes.

Rinse pearl barley under the tap. Put in a saucepan and pour boiling water a couple of centimeters above the level of the cereal. Put on medium heat. Stir periodically so that the cereal does not burn. When the water level drops, add fresh cold water, so the barley will boil quickly for soup. Rinse the prepared barley and place in the soup 5 minutes before cooking. Serve the cooked soup with sour cream and sprinkle with fresh herbs.

Fresh mushroom soup with pearl barley.

Cut fresh mushrooms into slices, stew in a saucepan with chopped onions. Washed barley pour a large amount of boiling water and cook until half cooked. Add to the barley potato cubes, stewed mushrooms with onions and cook for another 15 minutes. Season the finished soup in a bowl with sour cream.

When cooking soup from dried mushrooms, if you do not like dark broth, then drain the first boiled broth from mushrooms. Pour mushrooms with fresh boiling water again and continue cooking until cooked.

In a soup with fresh mushrooms, you can add chopped peeled tomato, five minutes before the soup is ready.
