Such salads are designed for a buffet table or served as a light meal before fish dishes. Serve avocado salad in portions on a wide plate or tray, along with a small dessert spoon.

To prepare a salad, take fresh ripe avocados. The peel should be dense and uniform in color, otherwise the dish will not look beautiful during serving. The pulp should be light green or slightly yellowish and very soft.

Wash avocados well in warm water, dry. Take a sharp knife and gently cut in half along the fruit. Remove the bone and some pulp from the middle. You should get a small boat. At the bottom of the boat made of avocado, lay out the previously washed and dried arugula greens.

Chop the remaining avocado pulp and mix with chopped cheese or feta cheese. Garnish with chopped cherry tomatoes and red pomegranate seeds. Before serving, you can optionally sprinkle the salad with balsamic vinegar or lemon juice.
