Peel the pistachios, grind heavily in a food processor.

Mix ground pistachios with sugar and cream, cook in a small saucepan over medium heat, stirring occasionally. Remove the pan from the stove when the sugar has completely dissolved. Allow 10 minutes to cool.

Add three egg yolks to the warm mixture of pistachios and cream, whisking with a whisk after each. Then put on fire, stir with a wooden spoon. Cook until the temperature of the sauce rises to eighty degrees.

Strain the finished cream through a sieve, pour into a bowl, cover with parchment paper, put it in the refrigerator for an hour and a half. After that, you can try pistachio cream.
