French Cauliflower Appetizer

To make an original dish of French cuisine, you will need:

- ½ head of cauliflower of medium size;

- 3 carrots;

- 150 g canned green peas;

- 150 g canned corn;

- 1 can of canned beans (red or white);

- 1 glass of cream;

- 3 tbsp. l olive oil;

- 1 ½ tbsp. l butter;

- parsley;

- pepper;

- salt;

- sugar.

Wash the cauliflower and divide into inflorescences, peel the carrots and cut into thin strips. Heat butter and vegetable oil in a pan and simmer the cauliflower with carrots, beans, and corn for 15 minutes. Then pour the green peas, pour the cream and simmer for another 5 minutes. Salt, sprinkle with pepper, add granulated sugar to taste. Mix all the ingredients well. Garnish the finished vegetable appetizer with finely chopped parsley.

Cauliflower Salad

To prepare the original salad of cauliflower, mushrooms and celery, you will need:

- 1 head of cauliflower;

- 2 stalks of celery;

- 350 g of fresh champignons;

- 10 pieces of radish;

- 50 g of soft cheese;

- 5 walnuts;

- juice of 2 lemons;

- 5 tbsp. l olive oil;

- 4 tbsp. l oily sour cream;

- ground black pepper;

- salt;

- greens for decoration.

Carefully wipe the mushrooms with a damp cloth, peel and cut into slices. Then put in a shallow bowl, fill with lemon juice and put for 40 minutes in a cool place to marinate. After this time, drain the remaining juice.

Divide cauliflower into inflorescences, put in boiling water and cook for 7-10 minutes. Then throw in a colander and cool. Rinse and finely chop the celery stalks, cut 4 radishes into slices, and the rest into slices.

Put soft cheese in a separate bowl and mash it well with a fork, gradually adding olive oil and sour cream. Peel the walnuts, chop the kernels with a knife or in a mortar and put in the cooked mass. Mix everything thoroughly.

Put the prepared components of the salad into the salad bowl: boiled cauliflower, sliced ​​radishes, celery and mushrooms pickled in lemon juice. Add the sauce made from cheese, sour cream and nuts. Season to taste with pepper and salt. Mix well and garnish with radish slices.
