  • - Carrots - 1 pc.;

  • - Sauerkraut - 150 g;

  • - Tomatoes - 1 pc.;

  • - Leek - 50 g;

  • - Bacon (or smoked bacon) - 100 g;

  • - Celery root and parsley - half;

  • - Salt, pepper, sour cream - to taste;

  • - Vegetable oil - 2 tbsp.

To make the soup, we need a thick-walled pan. We will heat the oil in it.

Onion (half) and leek peel, rinse and cut into cubes.

Fry 2 types of onions in hot oil for 3-5 minutes.

Peel the carrots (half), celery and parsley roots and cut in the same way as onions. Add to the onion and fry for 10 minutes.

We introduce water into the vegetables, about 2 glasses. You can add peeled and chopped tomato at this stage.

Season the broth with spices, salt, put a bay leaf and cook for another 20 minutes.

Filter the finished broth and cool.

Let's start cooking the soup itself. Peel and dice the potatoes, remaining carrots and onions.

Fry all these vegetables in a small amount of vegetable oil. Add the previously prepared broth, vegetables should be covered with it.

Grind the finished vegetables with a crush to a state of mashed potatoes with small pieces.

We wash sauerkraut under cold water and put it in a colander. Add to the soup and mix.

Bring the soup to taste with spices and salt.

If we cook lean soup, then we need only add greens and everything is ready. If not, then we need to fry the bacon in a dry pan to the state of cracklings and dry them on a napkin.
