You will need
3 ripe bananas, 250 grams of freshly squeezed orange juice, 3 slices of orange, 1 lemon, 1 glass of brandy or rum, 4 yolks, 2 protein of chicken eggs, 2 tablespoons of sugar, 10 grams of gelatin, 250 grams of cream, 1 packet of vanilla sugar.

Break the eggs and separate the yolks from the proteins. Mix the yolks with sugar and vanilla, rub until white.

Pour gelatin with cold water and leave for 20-30 minutes. Squeeze the juice from the lemon.

Combine orange and lemon juice, put on a small fire and bring to a boil. Add the yolk mass to the juice.

Pour the yolk mass into a small saucepan, pour hot juice and put in a large container. Heat in a water bath for 5 minutes, whisking the mixture.

Turn off the heat and pour the gelatin into the cream. Put the cream in the cold until completely cooled.

In cream, add 2 egg whites and beat in a thick foam. Mash bananas with a fork.

Add bananas, cognac and whipped whites to the cream. Arrange in a bowl, garnish with orange slices and leave in the refrigerator for 1 hour. Serve chilled to the table.
