Ingredients:

  • 1 carcass of pink salmon (from 0.5 to 1 kg);
  • 1 onion head;
  • 1 thin-skinned lemon;
  • 2 red tomatoes;
  • 150-200 g of Parmesan cheese;
  • a mixture of provence herbs;
  • 4 cloves of garlic;
  • coarse salt.

Cooking:

  1. Thaw carcass of pink salmon completely. To clear of scales, to cut off the head, fins and tail. Cut the abdomen along and scrape all the insides, rinse the treated fish. Next, cut pink salmon along the ridge, you get two longitudinal halves. Gently pick up the ridge with bones with a knife and remove. The result is a filet on the skin.

  3. Cut the lemon in half. Pour pink salmon over the juice of half a lemon. Cut the second part into thin circles.

  7. Peel the onion head and cut into half rings.
  8. Grate the cheese. When choosing cheese, you need to start from the fact that the dish will be with Italian flavor, so the Parmesan hard variety or similar ones - Swiss, Gouda, Gorny, Edam, Dutch is perfect.
  9. Meanwhile, the fish is already saturated. Put each half of the fillet on a separate foil.
  10. All the prepared foods are evenly divided into 2 parts: sprinkle pink salmon with garlic, put lemons, onion on top, then tomatoes. Tighten the edges of the foil so that the fish is in a boat, that is, the pieces of the fillet are not completely wrapped, but we leave the surface open.
  11. Now you need to carefully place the pink salmon on a baking sheet, put in the oven at 200 ° for 20 minutes
  12. After the time has passed, pull out a baking sheet with fish, sprinkle with cheese each piece and send to bake for another 15 minutes.

Such a dish is served on the table right in the foil, and the fish can also be decorated with greens.
