Vegetarian borscht differs from usual only in the absence of meat. However, for some people (and there are not so few of them) it is quite difficult to sharply abandon their taste preferences, because borsch without meat can be cooked in this way, but its taste will still be different. Vegetarian borsch, prepared according to the proposed recipe, preserves the taste of the usual traditional dish. And the absence of animal protein is offset by vegetable protein in the form of beans.

You will need

  • - beans - 1 glass;

  • - turnip - 1 piece;

  • - carrots - 2 pieces;

  • - beets - 2 pieces;

  • - onions - 2 heads;

  • - garlic - 3 cloves;

  • - sweet pepper - ½ part;

  • - ginger or parsley root - 1 small;

  • - tomatoes - 4 pieces or tomato paste 2 tbsp;

  • - potatoes - 3 pieces;

  • - white cabbage - 300 grams;

  • - lemon juice - 1 tbsp;

  • - a bunch of greenery;

  • - salt pepper;

  • - vegetable oil - 3 tbsp.

Rinse and peel the vegetables, preheat the oven to 180 degrees and bake 1 beet, 1 carrot and half a turnip in it.

Boil 2/3 of the beans soaked in brackish water in four liters of water over low heat. Bake the baked vegetables in the oven in a broth with beans.

Vegetarian borsch as well as simple borsch can not be imagined without dressing. While the broth is being cooked, we will take care of it. To do this, chopped garlic cloves and ginger root should be fried to a translucent state in a large frying pan in vegetable oil.

Cut the onion into half rings and lightly fry along with garlic and ginger, then add the chopped tomatoes or tomato paste to the pan and stew all together.

Cut the remaining carrots, beets and peppers into strips and also send them to the pan. Then, the future dressing for vegetarian borsch is poured with three or four ladle soup broths.

Add lemon juice to the dressing, be sure to cover the dishes, reduce heat and simmer for about an hour.

In the meantime, we remove the prepared beans and vegetables from the broth and make mashed potatoes in any way - using a blender or a simple pusher.

Mashed potatoes are returned to the pot with the broth, a third of the remaining soaked bean is added to it, and a little later, diced potatoes. When the beans are ready, in our vegetarian borscht you need to add cabbage and cook it until half cooked.

Now it's time to think about refueling. It should be salt, add a little sugar, pepper for spiciness, and when the cabbage is half ready, combine all the components of the borsch in a pan.

After thoroughly mixing the borsch, add it to your taste, add spices and herbs, cook for a couple of minutes and turn off the heat. Vegetarian borscht is ready, but it certainly needs to be allowed to brew for at least an hour. And only then serve.

Useful advice

You can cook lean borsch, replacing the meat in it with mushrooms. As you know, mushrooms are a source of protein and contain many trace elements necessary for the body.
