Pork ribs belong to the category of inexpensive, affordable meat on the bone. They are fried, stewed, baked in the oven. Surprising with this dish is quite difficult. However, if you cook them using all three methods, seasoning with fragrant spices and adding a unique combination of sweet honey and sour vinegar, the dish will turn out to be fantastically aromatic.

  • - 2 kg. pork ribs;

  • - 1 ginger root;

  • - 1 chili pepper;

  • - 2 teaspoons of Sichuan pepper;

  • - 8 stars star anise;

  • - 6 tablespoons of honey;

  • - 200 ml. soy sauce;

  • - 4 tablespoons of rice vinegar;

  • - 500 ml. chicken broth;

  • - olive oil;

  • - salt and pepper to taste;

  • - frying pan with high edges;

  • - cooking tongs.

Turn on the oven to heat up to 180 degrees.

Season the pork ribs with salt and pepper, rubbing thoroughly. Rib ribbon is recommended to cut into separate pieces. So ribs are more convenient to cook and easier to eat.

Light the hotplate and set the pan to fry. The baking sheet should be with high edges. If this was not at hand, then use a deep frying pan, which is also intended for baking. Add a little olive oil to the pan (pan).

Make sure that the baking sheet (pan) is sufficiently heated and begin to fry the pork ribs until golden brown for about 2-3 minutes on each side. Use the tongs to turn over. While the ribs are fried, cut the ginger into thin slices and lay on top of the ribs. The thinner the ginger, the more aromatic the dish will be.

Slice the chili peppers into small pieces and add to the ribs. Add Sichuan pepper, star anise and pour ribs with honey there. Continue cooking until the process of caramelizing honey begins.

Pour in soy sauce, rice vinegar and chicken stock. Bring everything to a boil and simmer for 7-10 minutes.

Place the baking sheet (pan) in the preheated oven for 30 minutes, then turn the ribs over and bake for another 30 minutes.

Remove the pan (pan) from the oven, put it on the fire again and thoroughly heat the marinade for 5-8 minutes until it is thick enough.

Be sure to try the marinade in the cooking process. If necessary, add a little more vinegar or, conversely, honey to achieve the perfect balance of sweetness and acid to your taste.

Use fresh meat for cooking. Choose fleshy and fatty ribs. This will make the dish juicy and tender.
