You will need
- - eggs - 2 pcs.;
- - milk 2.5% - 2 tbsp. l.;
- - sugar - 2 tbsp. l.;
- - vegetable oil - 1 tbsp. l.;
- - canned apricots - 4 pcs.;
- - apricot syrup - 4 tbsp. l.;
- - ground cinnamon - a pinch;
- - almonds - 2 tbsp. l

Separate the egg whites from the yolks. Beat whites in a stable foam, rub the yolks with sugar. Combine the proteins with the yolks, add milk, mix.

Grind apricots (2 pieces) into a puree condition. Add cinnamon and apricot syrup. Cut the remaining apricots into thin slices.

Grind almonds with a blender until fine crumbs. Fry in a pan without oil.

In vegetable oil from egg mass, fry the omelet until half ready (you need to fry only one side of the omelet). Then put apricots sliced in slices on one half of the omelet, on top - apricot puree and roasted almonds. Gently cover the apricots and mashed potatoes with the second half of the omelet. Place the omelet in the oven and bake at 200 degrees for 15 minutes.
