In the old days, making pancakes was a real rite, strangers were not allowed to this ritual, they were even allowed to watch the hostess knead the dough and bake pancakes. This is a special art. You need to know how much dough to pour on the pan, when to turn it over so that the pancake is rosy, but not burnt.

There are two conditions, compliance with which will allow even the first pancake to bake is not “lumpy". Firstly, the pan must be very well heated, and secondly, it must be perfectly clean.

Ready pancakes are stacked and put in a warm place. There is even a special dish for pancakes - crepe maker, unfortunately, forgotten in our time. It is a ceramic dish with a high semicircular lid.

The stuffing is often wrapped in pancakes; it can be completely different, both sweet and meat. Cheese is one of the most commonly used fillings.

First we prepare all the products. We get the milk in advance from the refrigerator so that it is at room temperature, or slightly warm it. Sift flour through a sieve, three cheese on a fine grater. My parsley, dried with a towel and finely chopped. We clean the garlic.

Now the actual cooking. Beat eggs with a mixer with salt and sugar in a froth. Pour warm milk and mix well. Then pour in the sifted flour and baking powder and beat again. Squeeze garlic through a garlic squeezer, add grated cheese and pour in vegetable oil. Once again, beat well with a mixer at slow speeds.
