We prepare the ingredients. It is worth noting that all the components must be finely chopped. Chop the garlic and onion.

Chili pepper cut and remove seeds. It must be cut as finely as possible so that in no case large pieces come across in the sauce. The sharper you want the sauce, the more peppers you need. The taste will be very burning in this case.

Wash and peel tomatoes. It is best to pour boiling water over them to handle the job faster and easier. After that, cut the vegetables into small cubes. The taste of the sauce depends on the tomato, so you should choose a bit sweet varieties. The fruits should be ripe enough.

Finely chop the cilantro. Instead, you can use ordinary parsley, which should also be chopped.

Pour a little vegetable oil into the pan and fry the onions and garlic together. Add tomatoes, a little salt and pepper. Stew for about three minutes. Add the chilli and continue to simmer another three minutes. Then pour the juice of half lime, sprinkle with herbs, mix and remove from heat. The resulting mass should cool slightly, after which it should be put in the refrigerator for several hours. The sauce is served cold.
