Few people decide to mix wild rice, cherries and feta cheese in one dish. However, this flavor combination is just magical! In addition, the salad with cherries and wild rice is light, beautiful. Boil the rice in advance, then prepare the salad immediately before serving in just 20 minutes.

- - 200 g of boiled wild rice;
- - 200 g feta cheese;
- - 100 g of sweet cherry;
- - 80 g of arugula;
- - 1 shallot;
- - 2 tbsp. tablespoons of olive oil, balsamic vinegar;
- - black pepper, salt.

Rinse shallots, cut into thin rings. Pour a small amount of olive oil into the pan, add the onion rings, fry them until golden brown over medium heat, stirring so that they do not burn.

Rinse the cherries. It is better to take large dark berries for the salad, then the salad will turn out to be very juicy, tasty. Cut each in half, remove the seeds. Cut feta cheese into small, even cubes.

Combine rice, arugula, cheese, cherries and onions in a deep bowl. Boil the rice in advance until cooked, but do not boil it - it should not turn into porridge.

Separately mix balsamic vinegar with olive oil, salt, pepper. Season the ready-made salad with cherries and wild rice in the resulting sauce, leave it to cool slightly for five minutes and soak in the sauce before serving.
