Many housewives are familiar with the problem when for unexpected guests you need to manage to cook from what is in the refrigerator what is not ashamed to be served. This salad was “born” on one of these unexpected visits.

Pick your recipe

You will need

  • - 50-70 g of rice,

  • - 2 eggs,

  • - 200 g of meat or poultry,

  • - 3 pickles,

  • - 1 fresh bell pepper

  • - a small jar of pitted olives,

  • - 1 tomato,

  • - 5-6 radishes,

  • - greens,

  • - salt

  • - 2 tbsp. l vegetable oil

  • - 2 tsp lemon juice.

Instruction manual

Boil rice and eggs. Boil the meat, cool, do not pour the broth. Cut the eggs in half or quarters.

Cut the meat into strips, cucumbers in circles. Remove the seeds from the bell pepper, cut into half rings. From the radish, make "rosettes." Dice the tomato. Stir vegetables and rice, drain the water from the olives and add to the salad. Salt, season with oil, meat broth and lemon juice.

Carefully do not overdo it with dressing, vegetables and so give juice. Gently mix again. Lay eggs on top, decorate with chopped greens. The salad is so satisfying that it could well become a full dinner. By the way, once I didn’t have boiled poultry, and the guests, as they say, were already pounding with spoons. Then, instead of chicken, I used the usual canned food in oil, which I found in the refrigerator (any fish is suitable, but it is best to take saury).

Useful advice

It turned out very well. Especially the next day (lettuce, however, quite a bit), when the rice was properly soaked in canned juice.
