Oat and rye bran, which form the basis of bread prepared according to this recipe, are absorbed by the body differently than other carbohydrates. - 70 g of oat bran;

- 50 g of rye bran;

- 35 g of wheat gluten;

- 100 ml skim milk;

Making bread without flour

Stir the dry yeast into warm milk heated to 50 degrees. Add half the gluten provided in the bread recipe and salt. Place the container in a warm place to lift the sponge. This usually takes about 20-30 minutes. You can understand that the dough is ready by the bubbles of foam that appear on the surface.

Combine the dry ingredients: oat and rye bran, the remaining gluten, and flaxseeds (set aside for a little topping). Combine both masses and mix thoroughly. Make sure that the dough does not have lumps - they can affect the finished bread in an unimportant way.

Leave the dough to rise for 1-1.5 hours. It is desirable that it is suitable in a warm place - for example, a battery or other heating device. In order for the bread prepared without flour to be magnificent, the dough must be mixed several times in the process, allowing it to rise again and again.

When the dough is ready, put it in a silicone mold with a spoon. Ideally, a shape divided into six small bricks. In this recipe, all the ingredients are given just for this form. Do not fill it completely. Leave at least a third of the height unoccupied, otherwise the bread may “run away”. Sprinkle the surface of the dough with flax seeds, let the bread come up again and carefully move the mold into the oven.

Bake bread without flour for about 20-30 minutes at a temperature of 160-200 degrees. The exact baking time will depend on the form in which you make your bread, and the features of your oven.
