The use of olive oil has been known to people for several decades. Today it is carried out in such areas: in medicine, food production, as well as in the cosmetic business. The homeland of olive (olive) is considered to be Southern Europe (more precisely, the Mediterranean coast), but it is also widespread in Australia, the USA, some species grow on the Black Sea coast.

Olives have been known to man for several millennia, as evidenced by excavations of the ancient fossils of this tree. There are a great many varieties of olives, as well as the applications of these varieties in various spheres of life (some varieties are used to obtain oil, others are fruits with a small bone for food in fresh, dried or canned form).

Before the advent of electricity, the peoples of the Mediterranean used oil to light their homes, as they simply did not know how to remove bitterness during the processing of fruits. Later, technologies were developed to mitigate, preserve the taste and improve consumer properties by soaking the fruits for some time. Thanks to this, olive oil began to be widely used in food.

Olive is one of the most valuable food products, as there are a great many recipes based on oil used for medical purposes to treat problems with blood vessels, overweight, and skin diseases. We must pay tribute to the effect that produces olive oil used for cosmetic purposes. Creams, masks, balms and specialized oil-based soaps saturated with vitamins, organic acids give an unsurpassed effect.

The oil contains substances with unique properties, and unsaturated fatty acids can lower cholesterol, maintaining balance in the body, which is widely used in the so-called Mediterranean diet.

Most valued is the oil of the so-called first cold pressed (Extra virgin) low acid content. The acidity of this oil according to international classification should not be more than 0.8%. Of particular value is the product from Greece (island of Crete). At home, this product is well learned to use in the confectionery industry. It is also interesting that after the experiments, scientists established a fact - olive oil is the most suitable of all the oils that can be used for frying, as it can retain its properties under strong heating.
