Peperonate is a mixture of stewed sweet peppers cooked with onions, garlic, tomatoes and fresh basil. Peperonata is the perfect complement to grilled meat dishes.

You will need

  • - 500 g of sweet peppers of yellow and red colors;

  • - 250 g of tomatoes;

  • - 2 small heads of red onions;

  • - 3 tbsp. tablespoons cold pressed olive oil;

  • - 3 cloves of garlic;

  • - 20 leaves of fresh basil;

  • - 1 tbsp. a spoonful of red wine vinegar;

  • - 4 slices of white bread;

  • - salt to taste (preferably sea);

  • - ground black pepper to taste.

Pour cold water into a large pot, salt, put on a strong fire and bring to a boil. After the water boils, dip the tomatoes into it, bring it to a boil again and cook for about 30-40 seconds. Catch tomatoes from the water with a slotted spoon, throw them into a colander to allow excess water to drain. When the tomatoes have cooled, put them on a cutting board and peel them. Cut each tomato into 4 parts and remove the seeds. Dice the tomato cubes and place in a separate bowl.

Dice sweet peppers (5 cm each), chop the onion finely, crush the garlic under a press, and tear the fresh basil by hand. Fry slices of white bread on the grill or in a toaster.

Put a large deep pan on a strong fire. Pour olive oil into it and let it heat hot. In a frying pan with hot oil, put chopped bell pepper, chopped onion and chopped garlic. Reduce the heat to medium, close the lid and saute the vegetables until they are browned (5-7 minutes). Add salt to taste to sauteed vegetables, a few pinches of ground black pepper and fresh basil leaves. Mix all components thoroughly and simmer for about 10 minutes.

After the specified time, pour wine vinegar into the pan, mix and simmer for a few more minutes. Add chopped tomatoes and mix again. If the pan is dry, pour a little water or vegetable broth into it. Close the lid and simmer for 20-25 minutes until the peppers are soft and the tomatoes are mashed.

Sprinkle the finished dish with chopped leaves of fresh basil, put on plates and put in them a piece of grilled white bread.
