Tiramisu is one of the most popular desserts of Italian cuisine. Its name is translated literally, like pull (tira) me (mi) up (su) or lift me up. This multilayer dish is prepared from mascarpone cheese, savoyardi cookies, espresso coffee, Amaretto liqueur. The composition of the classic tiramisu necessarily includes cocoa powder, which dusts the finished dessert.

You will need

  • For classic tiramisu:

  • - 80 g of powdered sugar;

  • - 3 egg yolks;

  • - 250 g of mascarpone cheese;

  • - 120 g savoyardi cookies;

  • - 3 tsp instant coffee;

  • - 1 tbsp. l cocoa powder;

  • - 4 tbsp. l Amaretto liquor.
  • For tiramisu with cottage cheese:

  • - 300 g of fatty cottage cheese;

  • - 150 g of biscuit cookies;

  • - 2 tbsp. l sour cream;

  • - 3 tbsp. l powdered sugar;

  • - 1 tsp instant coffee;

  • - 1 tsp cocoa;

  • - 1 sachet of vanilla sugar.
  • For tiramisu with raspberries:

  • - 500 g of mascarpone cheese;

  • - 250 g raspberries;

  • - 18 pcs. Savoyardi cookies

  • - 5 guinea fowl eggs;

  • - 100 g of powdered sugar;

  • - 30 g of vanilla sugar;

  • - 4 tbsp. l instant coffee;

  • - 2 cinnamon sticks;

  • - 60 ml of Amaretto liquor;

  • - 10 g of cocoa powder;

  • - 6 stalks of mint.

Classic tiramisu

Pour instant coffee with a glass of boiling water. Cool and pour into a deep bowl. Add to Amaretto coffee. Beat egg yolks with powdered sugar until it is completely dissolved. Then, gently, constantly stirring, add the mascarpone cream cheese into the egg mass and beat thoroughly until smooth. Dip the savoyardi cookies in the coffee mixture and generously spread the cheese mass. Then put the cookies close to each other and on top of each other in portioned bowls or on a deep dish. Cover the tiramisu with the remaining cheese cream, leveling the residues over the top layer. Then cover the dessert with cling film and place in the refrigerator for at least 5 hours. Then, freeing the tiramisu from the film, sprinkle it with cocoa powder and serve.

Tiramisu with cottage cheese

Rub the cottage cheese through a sieve, then beat in a blender with sour cream, powdered sugar and vanilla until a homogeneous consistency. Pour a teaspoon of instant coffee with 5 tablespoons of boiling water, mix and cool. Very quickly, so as not to get wet, dip the biscuit cookies in the cooled coffee and put them close to each other in the mold. Spread the curd cream evenly on top, then another layer of cookies, which is also covered with plenty of cream. Then cover the teramisu with cling film and place for 5 hours in the refrigerator or 20 minutes in the freezer. Then remove the film, sprinkle the dessert with cocoa powder and serve.

Tiramisu with raspberries

Separate the yolks from the whites and whisk separately: the whites into steep foam, and the yolks together with icing sugar until white. Put the cream of mascarpone cheese in a deep bowl, add the vanillin and mix well. Then gently introduce whipped whites and yolks into the cheese mass. Beat all the ingredients again until smooth. Ground coffee and cinnamon sticks pour boiling water. Let the coffee brew and cool. Break the Savoyardi cookies in half and distribute into 6 portioned cookies. Pour each serving with 10 milliliters of Amaretto and 40-50 milliliters of cinnamon coffee. Then grease the cookies with cheese cream and refrigerate the tiramisu for 3-4 hours. After this time, sprinkle the finished dessert with cocoa powder, garnish with raspberries and sprigs of mint.

note

If tiramisu is made in portioned vases or bowls, then a layer of cream is placed on the bottom, on top of which biscuit cookies are placed.

Useful advice

Savoyardi in tiramisu can be replaced with Lady’s fingers cookies or an ordinary biscuit, which must be cut into rectangles.
