Turkey or rabbit meatballs in vegetable soup

Turkey and rabbit meatballs go perfectly with vegetable soup. This dish is prepared according to the following recipe. Take 100 g of turkey or rabbit fillet, two pieces of tubers of potatoes and carrots, two quail eggs (they can be replaced with half chicken), onion, bay leaf, salt and garlic as you wish.

Wash the meat thoroughly and send to a pot of water, leave to boil for another half hour after boiling. In addition to the pot with meat, put a second pot on the fire, in which you need to pour about 700 ml of water. Peel and dice potatoes, carrots, and garlic. When the water boils, send onions and carrots there.

After boiling again, cook the vegetables for another 10 minutes, then add the potatoes with garlic and cook for another 20 minutes. Remove the boiled meat from the broth and pass through a meat grinder or blender twice. Add eggs to the minced meat and form the meatballs. You can give them an unusual shape so that the child is more interested in eating. When the potatoes are cooked, send the meatballs to the pot with vegetables. After they pop up, salt the soup and put the bay leaf, cook another two minutes. The soup is ready.
