Fried breast with mushrooms

This is one of the simplest recipes for chicken with mushrooms. It does not require any special culinary skills or sophisticated technology. Heat treatment of all products is done in an ordinary frying pan.

All the necessary ingredients can easily be bought at any supermarket:

  • chicken breast (2 pieces);

  • 300 grams of mushrooms;

  • 2 large onions;

  • a glass of sour cream;

  • 50 grams of vegetable oil;

  • a few cloves of garlic;

  • salt and meat seasonings;

  • and fresh herbs to decorate the finished dish.

Peel the onions and mushrooms. Wash the fillet and, having dried with napkins, cut into small (2-3 cm) pieces.

Fry the onion chopped with half rings in vegetable oil: 1-2 minutes over high heat, then slightly reduce the gas and passer, stirring, for another 4-5 minutes.

In the meantime, you need to prepare the mushrooms. If you use frozen, remove them an hour or two before cooking. With fresh, you can start working right away. Wash them, cut a little larger than the meat.

Once the onion is soft and has a golden hue, put the chicken in the pan. Sauté it for 10 minutes. Add mushrooms and mix the mixture. Do not forget to salt and add spices!

Fry the dish over medium heat for another 5-7 minutes. During this time, the excess liquid will evaporate, and the chicken will become soft and juicy.

While the meat and mushrooms are cooked, make the sauce: chop the garlic and herbs and mix with sour cream. It will need to be poured to meat and mushrooms, after which cover the pan with a lid and simmer all together for 5-7 minutes.

The finished meal is juicy, aromatic and incredibly tasty. It can be served as a main dish, but a better option would be to additionally prepare a side dish: boiled or fried potatoes, pasta, rice, etc.

Chicken with mushrooms in cheese sauce

This delicate delicacy is perfect for home dinner or for an important family celebration. The main component of this dish is a spicy cheese sauce that conjures up thoughts of great receptions in the Palace of Versailles, while it is quite simple, takes little time and is prepared from the most common products that are in any home:

  • 300-400 grams of champignons or other mushrooms;

  • a pound of chicken;

  • 150 grams of hard cheese;

  • 0.5 liters of 20% cream;

  • some vegetable oil;

  • as well as salt and spices for meat: ground black pepper, Provencal herbs, etc.

Wash the mushrooms and cut into medium-sized pieces: mushrooms into 4 parts, oyster mushrooms - with plates 2-3 cm long. Mushrooms and other forest mushrooms with dense pulp can be crushed even finer.

Rub the cheese on a coarse grater.

Rinse the chicken breast in warm water and pat dry. The pieces of meat should be small - 1-2 cm.

Now you need to step by step to prepare each component of the dish. First, pour a few tablespoons of oil into a preheated pan and put mushrooms in the same place. They need to be fried over high heat until a golden crust forms. Throw them into a clean bowl and cook the meat in the same oil. There is one important condition: chicken without water can not be kept on fire for a long time, otherwise it will become dry. 5-7 minutes are enough.

Next, both components need to be mixed in a pan, salt, add seasonings and mix thoroughly. Then pour in the cream and, reducing the gas to medium, let it thicken a little.

The last step remained. Let the meat boil again, sprinkle it with grated cheese and hold it on fire for another 1-2 minutes. Chicken sauce with mushrooms and cheese is ready!

Sour Cream Chicken Fricassee

According to cook mythology, the name "fricassee" came from French restaurants of the middle hand, where it was customary at the beginning of the day to collect leftovers from yesterday's products and make them hearty and cheap food for poor visitors. Literal translation means “all sorts of things” - and, indeed, you can cook such a dish with the addition of almost any product.

The classic recipe contains not many ingredients:

  • mushrooms (300-400 grams);

  • bell pepper (1 piece);

  • garlic (no more than 2-3 cloves);

  • a glass of 20% cream;

  • 80 grams of sour cream (about 5 tablespoons of liquid or 4 - thick);

  • fresh greens;

  • a tablespoon of flour;

  • some lean oil;

  • as well as salt, ground black pepper and other seasonings of your choice.

If desired, you can add other products to the dish - for example, fried zucchini or carrots.

Wash and finely chop the fillet. Grind herbs and garlic; sprinkle meat on them.

Chop onion and bell pepper into cubes or half rings, mushrooms - in small pieces, not more than 2-3 cm (they will decrease even when frying).

Fry the onion in a small amount of oil until soft. Put sweet pepper to it and pass over medium heat for another 5 minutes.

The meat and mushrooms in this recipe are laid out together and fried with vegetables for another 10-15 minutes. At this point, add salt and spices to the dish.

The next step is cream. It is necessary to dilute the flour in them and pour the mixture into the pan. Reduce the heat a little and simmer under the lid for 5-10 minutes.

Chicken fricassee with mushrooms goes well with any side dish. It can be prepared as a daily meal or made an important part of the festive table. But learn - this delicacy has a rather high calorie content (468 kcal in 100 grams).
