Croquettes are prepared from minced meat, the basis of which is the delicious meat of a young rabbit. Boiled carrots, some smoked bacon and spices are added to the rabbit minced meat. All this makes the dish unusual and interesting. It is combined with any side dish.

The rabbit should be chosen so that we have one big but young rabbit for the dish. It is necessary to cut the rabbit, separating all the meat from the bones. Cut the meat into small pieces.

Cut the smoked pork fat into small slices, divide the cooked carrots into oblong parts and pass everything together with rabbit meat through a meat grinder.

Beat the eggs, add salt, nutmeg (chopped and ground beforehand), black pepper (ground) and breadcrumbs to them.

Combine beaten eggs with spices with rabbit minced meat. Mix thoroughly until smooth.

Heat a frying pan with olive oil and fry from all sides until croquettes are browned.
