Kiev cake is an unforgettable sweet treat that has become a symbol of Ukraine. The cake consists of meringue melt in your mouth and a delicate nut cream. Treat yourself and your loved ones by spending a little time on cooking.

You will need

    • for shortcakes:
    • 0.5 cup cashews;
    • 0.5 cup hazelnuts;
    • 1 cup sugar;
    • 10 eggs:
    • 1.5 tbsp flour;
    • vanillin.
    • For cream:
    • 200 g of powdered sugar;
    • 2 tbsp cognac;
    • 400 g butter;
    • 2 tbsp cocoa powder;
    • 4 tbsp condensed milk;
    • vanillin.

Grind granulated sugar in a blender. Carefully separate the egg whites from the yolks. Place the squirrels in a deep bowl, in which you will knead the dough for shortcakes. Sauté the nuts and chop them a little. To chop nuts, put them in two plastic bags and mash with a rolling pin. Set aside 1/3 of the nuts to decorate the cake. Add flour to other nuts.

Beat the whites thoroughly with a mixer. Beat until a thick, dense foam is formed. Add crushed sugar and vanillin to the proteins, without stopping mixing. The quality of meringues will depend on how much you beat the squirrels. You can check if you have whipped enough proteins by turning the bowl over. If the squirrels do not drain, then they are sufficiently beaten.

Gently add nuts and flour to the resulting dense protein mass. Knead the dough. Knead the dough with careful movements from the bottom up, otherwise the proteins will settle.

Prepare two round baking tins and place parchment paper on them. Put the dough in the forms. You should get two cakes about 8 mm high. Preheat the oven to 140 degrees. Put the cakes in the oven for 2.5 hours. After cooking, leave the cakes in the oven until completely cooled.

Beat butter, powdered sugar, condensed milk, vanillin and cognac in a blender. Set aside half the resulting mass, and stir the cocoa in the other half.

Put the first cake on a flat plate and carefully coat it with white cream. Put the second cake, which is covered with cocoa cream. Thoroughly flatter the sides of the cake and sprinkle them with nuts. If you still have cream, they can decorate the top layer of the cake.

Useful advice

If two forms are not cleaned immediately and the cakes are baked alternately, the dough is prepared in two sets. Halve the dough products, knead one serving first, and then the second.
