The most suitable for bread makers are dry fast-acting yeast, which is known for its quick "raising" of the dough (one and a half to two times faster than other yeast). They are used not only for making bread - but also for preparing all other types of home-made cakes, to which they add airiness, splendor, tenderness, delicate aroma and golden brown. The amount of dry yeast is indicated in all recipes that are intended for the bread machine.

Also, for baking bread in a bread machine you can use fresh pressed yeast, which is grown using a special nutrient medium due to the continuous accumulation of biological mass of sowing and uterine yeast. In this case, the medium undergoes intensive aeration, after which the ready-made commodity yeast is compressed or vacuumized. Fresh yeast gives the bread an ideal texture and excellent taste, as it provides the most powerful fermentation.

Fresh yeast, as a rule, has a cream color, and when pressed, they should not be smeared, but broken, otherwise they are spoiled. They should not be stored in sealed containers, as the yeast must breathe and be constantly in contact with air. To make bread in a bread machine you need to take three times more fresh yeast than dry yeast (by weight). In this case, you must first very carefully mix fresh yeast in a small amount of water, and then pour them into the bread machine with the main liquid.
