  • - 1/3 tsp ground allspice;

  • - 500 g of chicken liver;

  • - 3 chicken eggs;

  • - 80 g sour cream;

  • - 180 g flour;

  • - 3/4 tsp salts;

  • Filling:

  • - 100 g of rice;

  • - 2 chicken eggs;

  • - 1 carrot;

  • - 1 onion;

  • - 100 g of cheese;

  • - vegetable oil;

  • - salt;
  • For pies:

  • - 300 g of chicken liver;

  • - 400 g of puff pastry;

  • - 1 onion;

  • - 1 small carrot;

  • - 1 chicken egg;

  • - 1/3 tsp ground paprika and black pepper;

  • - salt;

  • - vegetable oil.

Chicken liver pate

Remove the butter from the refrigerator to soften. Peel the onion and chop in half rings. Rinse the chicken liver and cut off the hard veins. Pass the onion in vegetable oil until transparent over medium heat, add the liver to it and cook for several minutes until it turns gray-brown.

Reduce the cooking temperature to a minimum, pour cream and alcohol into the pan, put seasonings and salt to taste. Close the dish with a lid and simmer its contents for 15-20 minutes. Cool the liver fry and beat thoroughly with a blender with pieces of butter until smooth. Soak the paste in the refrigerator for several hours, preferably in a glass bowl.

Chicken Liver Cupcakes

Boil rice in salted water and hard-boiled eggs. Cool everything, chop the second with a knife and mix both products in one bowl. Grate the carrots on a coarse grater, peel the onion and chop it thinly. Fry vegetables in vegetable oil until soft, let cool slightly, transfer to rice mass, add salt and mix thoroughly.

Prepare the chicken liver and mince it. Mix the resulting mashed potatoes with eggs, sour cream, flour and salt. Take the cupcake mold. Pour the "dough" into the cells about a third of their capacity, then carefully lay the filling in the very middle of the products, report the liver mass to the very top. Sprinkle rich pastries with grated cheese and bake it for 20-25 minutes at 180oC.

Chicken liver puff pastry

Remove the dough from the freezer. Wash the liver and cut into pieces. Grind onions and carrots and fry for 5-7 minutes in a small amount of vegetable oil, along with the liver over medium heat. Crank everything in a meat grinder or blender, salt and pepper.

Roll out the dough, trying to maintain the correct form of the formation. Cut it into 12 identical rectangles. Lay out the filling on them, fold the edges and pinch them with your fingers. Lubricate the liver pies with a beaten egg and bake them for 15 minutes at 180oC.

Flour the table so that the dough does not stick to the surface.

Useful advice

If the cupcake mold is made of metal, the cells need to be coated with vegetable oil. For silicone dishes, this does not need to be done.

Roll the finished puff pastry in one direction, then it will rise better when baking.
