Sometimes circumstances are such that in a hurry it is necessary to cook some extraordinary dish in order to treat and at the same time surprise unexpected guests. This dish may well be baked potatoes with mushrooms. It can act both as a side dish and as a main treat. Its advantage is that when it is cooled it is even tastier. This dish can be prepared in the oven, on the grill, or in the microwave.

You will need

    • For baked potatoes with mushrooms in the oven:
    • 1 kg of potatoes;
    • 2 processed cheese;
    • large onion;
    • 300 g of champignons;
    • egg;
    • 10 g of vegetable oil;
    • spices and salt.
    • For baked potatoes with mushrooms in the microwave:
    • 250 g of any mushrooms;
    • 1 kg of potatoes;
    • 100 g of hard cheese;
    • 10 g of vegetable oil;
    • 50 g cream;
    • a bunch of parsley;
    • salt and black pepper.

Peel the potatoes and cut them into small cubes. Boil in salted water until half cooked. Cut fresh mushrooms into thin slices. Chop the onion finely.

Heat the oil in a pan and sauté the onion in it until soft. Put it on a plate. Fry the champignons in a pan until the liquid evaporates from them. Add onions to them. Stir everything, then pepper and salt.

Take the foil and lay it on the bottom of the container in which the dish will be baked. Lubricate the foil with vegetable oil and lay the potatoes on it. Lay the fried mushrooms with onions on top.

Grate the cream cheese on a coarse grater. Beat the egg and mix it with cheese. Coat potatoes with mushrooms with this mixture.

Put the dish in the oven, heated to 250 degrees, and bake until golden brown. Cover the finished dish with a lid or foil on top and let it brew for 20 minutes. After that, serve to the table.

Try baking potatoes with mushrooms in the microwave. To do this, rinse the potatoes thoroughly and boil it directly in the peel in salted water.

Cut the mushrooms and fry them in hot oil. Absolutely any mushrooms can be taken for this dish, however, oyster mushrooms are best suited. For piquancy, you can add chopped clove of garlic to them.

Cool the boiled potatoes and cut it into two halves. Using a teaspoon, make a recess in the halves and carefully remove the pulp. Cut it into small cubes.

Grate the cheese, mix it with cream and sauteed mushrooms. Take high fat cream (at least 35%). Fill the potato halves with this mixture. Do not forget to pepper and salt on top. Make a few punctures on the potatoes with a fork or wooden skewers so that steam can freely come out of it.

Put the potatoes in the microwave and turn it on at full capacity for 10 minutes. The cheese should melt, and the potatoes themselves are a little browned. Sprinkle baked potatoes with mushrooms chopped herbs and serve.

Useful advice

Instead of cream, you can use sour cream. Never replace them with mayonnaise, since at high temperatures it not only exfoliates, but also forms substances harmful to the body.
