Manti is a traditional Uzbek dish, in appearance similar to large dumplings. They are not boiled in water, but steamed, in a special pan - a pressure cooker. If there is no such pan, cook the manti in an ordinary double boiler.

  • For the test:

  • - 1.5 cups flour;

  • - 1 cup of warm water;

  • - 1 egg;

  • - 1 tsp salt.
  • For filling:

  • - 300 g of lamb or beef;

  • - 2 tbsp vegetable oil;

  • - 1 medium-sized potato tuber;

  • - 4 onions;

  • - 1/2 tsp ground black pepper;

  • - 1 tsp salts;

  • - 1 tsp caraway seeds.

Cook the dough. Pour flour into a bowl, salt it. Make a groove in the flour, pour the egg and water. Mix well with a fork, and then knead the dough with your hands. The longer you knead it, the easier it is to mold manti out of it.

Wrap the cooked dough with plastic wrap and leave it for 10-20 minutes. Prepare the filling. To do this, finely chop the meat with a knife. Peel and finely chop the onion.

Put the onions in a bowl, pour in the spices, mix and let the mixture stand for a while. Peel and finely chop the potatoes or grate it on a coarse grater. Add the onions and spices to the meat, put the potatoes, pour the vegetable oil and mix well.

Sprinkle flour on the table and lay the dough on it. Roll a sausage from it and cut into small pieces about the size of a walnut. Form balls from pieces, roll out thin cakes of them about 10 centimeters in diameter and about 3 mm thick. Put a tablespoon of minced meat on each cake. If desired, you can put on top a small piece of fat.

Form manti, for this, connect the opposite edges of the cake, pinch them. Then pinch the remaining two half circles. The result is an almost square bag. Connect the four ends of the resulting bag in pairs and give it a rectangular shape.

Fill the bottom of the double boiler with boiled water, set it on fire. Lubricate the tiers of a double boiler with vegetable oil and lay manti on them. When the water boils, set the tiers in a double boiler. Manti is cooked for 40 minutes under a closed lid with boiling water.

Put the prepared manti on a dish, pour them with butter, sprinkle with pepper, chopped herbs and serve.
