Of course, the quality of honey today is significantly different from the honey that was in the old days. Nowadays, the surrounding nature and air are polluted. Therefore, you need to buy honey from a friend beekeeper, so that you probably know in which zone the apiary is located. If you buy honey at a market or fair, be sure to ask for a quality certificate, because you risk not buying medical honey, but quite the opposite.

Instruction manual
1
First of all, you need to smell the honey, it should have a pleasant floral aroma, fake honey with sugar added has practically no smell.
2
Take a mechanical pencil (which, when wetted, dyes purple) and drop in a drop of honey. If honey is at least slightly colored, then it is diluted with water. Real honey should not be stained.
3
There should not be bees or pieces of wax in honey. It is very simple to check: dilute in a glass of warm water ½ teaspoon of honey. If you notice dark particles that have gone down or, on the contrary, have surfaced, then honey is contaminated.
4
Careless beekeepers often add starch and water to honey, this can be checked with iodine. Take a little honey from the bottom of the can and dilute with distilled water (a little), add a drop of iodine to this solution. If the solution turns blue, it means that honey contains starch, so it is better not to buy such honey.
5
You can consider a small smear of honey through a microscope, the crystals of real honey are needle-shaped or star-shaped. For counterfeit honey, crystals have regular geometric shapes or block shapes.
6
Gather a spoonful of liquid honey, raise and drain the honey from the spoon. Real honey will stretch in a continuous stream, and honey diluted with sugar syrup will drip in drops.
