Caesar salad dressing with a sauce that bears a similar name. This gas station is easy enough to prepare. The method of its preparation is very similar to the method of preparation of mayonnaise.

Boil water in any small saucepan. Remove the pan from the heat and dip two raw chicken eggs in this water. After 3 minutes, remove them and cool.

While the eggs are cooling, squeeze the juice of half a lemon into a separate bowl.

Place the contents of the eggs, both the liquid part and the resulting thin layer of boiled protein, in a blender glass and beat well. After that, add lemon juice to the eggs and whisk again.

Grate the Parmesan cheese on a fine grater and add 1-2 tablespoons of this cheese to the egg-lemon mixture. Beat everything thoroughly again.

After that, add a couple of drops of Worcester sauce or 20 g of sweet mustard (it is also called sandwich or French) to the resulting mixture. And whisking this mixture, begin to add olive oil in a thin stream (literally drop by drop). If you quickly add oil, then it may not mix with the rest of the mixture, but float to the top of the sauce. Beat sauce with such an amount of time so that its volume increases by 1.5 times.

By consistency, this sauce should be like 10% sour cream. The taste will be pleasant, delicate, creamy. The main thing is that the sauce is not very acidic, otherwise it can ruin the taste of the salad itself.
