Take the mackerel, rinse thoroughly and gut it.

Gently, without damaging the skin, make a deep incision along the ridge.

Rub the fish with salt and seasonings. Leave on for 2 hours so that it is well soaked in spices.

Stuff the mackerel belly with chopped onions.

Put on a baking sheet and place in the oven, preheated to 180 degrees.

The baking tray does not need to be lubricated with oil, as the mackerel releases a sufficient amount of fat.
