The basis for raw cheese is always two parts of peeled nuts / seeds, 1 / 2-1 part of water and salt. All other ingredients only give it a special taste.

To prepare cheese, cheese, the juice of half a lemon, a couple of cloves of garlic, a little dill and a teaspoon of honey are added to the base. For spicy hot cheese, pods of cayenne pepper, dill, half a head of onion, a tablespoon of olive oil are used. If we decide to make fermented cheese, then transfer the resulting mass to a gauze bag and hang over the sink for 12 hours.

Next, add salt, finely chopped seasonings, lemon juice or soy sauce, form and let it brew.
