Peel the asparagus from the hard peel, trim the tips, fold the stems into a bunch and trim them so that they are of equal size. Rinse the prepared asparagus under a stream of cool water.

Cook the asparagus. To do this, tie the stems into a bunch and lower them into salted boiling water, while the water should cover only the stems, not the tops. Cover the pan and cook the asparagus for about 4-5 minutes. After that, throw it in a colander.

Boil celery root and potatoes in their skins. Peel the vegetables and cut into small cubes.

Boil and salt the water to taste and dip the crayfish into it. Boil for 20-25 minutes until they turn red. Peel them and chop the pulp.

Wash apples, cucumbers, peel. Cut in the same cubes as potatoes with celery.

Stir all the ingredients in a deep bowl, add canned peas and sugar, salt to taste and pour vinegar. Stir again and season the salad with mayonnaise. Put on a plate a slide and sprinkle with chopped herbs.
