Take any saltwater fish with a small amount of small bones, such as haddock, cod, hake, pollock, catfish. To cook cutlets, you need to cut it into fillets. Cut the abdomen, carefully remove the insides so as not to damage the gallbladder, remove the film lining the abdominal cavity of the fish. Cut off the head and remove the fins. Rinse the carcass thoroughly several times with water. Without removing the scales, make an incision along the spine. First, separate one fillet, then, cutting off the spinal bone, get a second fillet. Remove skin from each with scales.

Soak slices of stale wheat bread in milk or water. Peel and washed carrots, chop coarsely. Cut the fish fillet into large pieces, mix with bread and vegetables and double-pass through a meat grinder.
