You will need

  • - eggplant - 1 pc;

  • - zucchini - 1 pc.

  • - leek - 470 g;

  • - Mozzarella cheese - 350 g;

  • - puff pastry - 600 g;

  • - butter - 80 g;

  • - salt;

  • - ground black pepper;

  • - chicken egg - 1 pc;

  • - cilantro and parsley - 1 bunch;

  • - dried ground oregano - 1 teaspoon.

Grind the white part of the leek into small slices. Melt the butter in a frying pan, spasser it, that is, fry until it becomes soft, stirring constantly. With eggplant and zucchini, do the same: cut into cubes and sauté. In the second, remove the peel if it is hard. Mix all the vegetables together.

Finely chop the parsley and cilantro, then enter to the main vegetable mass. Stir as it should. Season with salt and pepper.

Turn the cheese into small cubes and send to the vegetables. Stir the resulting filling and allow it to cool slightly.

After laying out a small amount of flour, about 2 tablespoons, on a work surface, roll puff pastry on it. Turn it into a thin layer, the thickness of which is not more than 2 millimeters. Then, using a knife, divide into wide strips 5 centimeters wide and about 20 centimeters long.

Lubricate the mold thoroughly, and then lay on it the successively obtained strips of dough so that each one lies on the edge of the previous one, in other words, with an overlap. Do not forget that the strips laid out in this way should cover not only the sides of the form, but also its bottom.

Place the vegetable filling on the dough and cover it with the free edges of the strips. Lubricate the future pie with a beaten egg and sprinkle oregano.

Send the dish to bake in the oven at a temperature of 190 degrees until golden brown, that is, for about 30-40 minutes. The generous farmer vegetable pie is ready!
