Pick a pea. To cook real pea soup, buy peas, which are divided into halves. To taste, it does not differ from the whole, but it cooks much faster, which will significantly save cooking time.

Prepare the main ingredient. Sort the peas, saving them from possible garbage or low-quality peas. Then fill with water and rinse it thoroughly with your hands, changing the water several times. After that, soak the peas in a little water for an hour.

Boil the broth. Pour ribs with cold water and set on fire. As soon as the water begins to boil and a foam begins to form, be sure to carefully remove it, otherwise the broth will turn out to be unappetizing.

Make a roast. While the broth is boiling, peel the onions, carrots and finely chop them. Heat the pan, pour some refined sunflower oil in it and lay out the vegetables. After that, reduce the heat on the stove and sauté the chopped vegetables until they turn golden. After that, put them on a plate, separating them from excess oil.

Cook the soup. Remove the cooked ribs from the broth and place them on a plate so that they cool slightly. Add peas to the broth, and after 20 minutes, peeled and diced potatoes. After the potatoes become relatively soft, salt the broth to taste and add the previously fried vegetables.

Separate the ribs from the bones and cut them into small pieces. When the soup is almost ready, add meat to it.

Pepper the prepared pea soup, throw 2-3 peas of allspice there and lower the bay leaf for a few minutes. Season with finely chopped parsley and cover. After 10 minutes, during which the soup will infuse and become even tastier, you can serve it to the table.

To make the soup thicker and more reminiscent of mashed potatoes, boil the peas to a mushy state. And if you want the peas to keep their shape, just boil them for 30 minutes.
