Pour 500 grams of flour and 11 grams of dry yeast into a deep bowl to prepare the dough. Pour in one glass of warm milk and add 30 grams of sugar, 2 chicken eggs, 50 grams of butter and zest from one half of the lemon. Knead the dough thoroughly. It should become resilient and soft.

Roll the dough into a ball, put in a bowl, cover with a towel and place for half an hour in a warm place. Thinly cut 300 grams of butter. Lay a cling film on a work surface and spread oil on it. Using a rolling pin, roll it over the film and put it in the freezer for 20 minutes.

Roll the dough into a rectangle with a thickness of not more than 2 centimeters. Free the oil from the film and place it in the center of the rectangle. Wrap the free edges in the middle so that you get an envelope. Then roll it to a thickness of 1 centimeter. Make sure that the oil remains inside.

Visually divide the dough layer into 3 parts and wrap the extreme ones towards the middle, wrap with plastic wrap and put in the freezer for 30 minutes. Then roll the dough into a long thin strip, fold the two extreme parts to the center again, wrap in a film and put in the freezer for half an hour. Repeat these steps one more time.

Roll the dough into a rectangle so that its thickness is no more than 8 millimeters. Using a knife, cut the formation into triangles, the base of which will be half the height.

Put a few pieces of chocolate on the base of the triangle and wrap the dough in a tube. Do the same with the remaining test. Bend the crescent-shaped tubes and place them on a baking sheet covered with baking paper. Lubricate the croissants with a brush dipped in milk and put in an oven preheated to 180 ° C for 25 minutes. Bake until golden brown.
