To prepare the "Spring" salad, young sorrel and nettle leaves (250-300 g each) and 100 g green onions, thoroughly rinse, dry and chop finely. Then mix it all with finely chopped 2 hard-boiled eggs. Add to taste mayonnaise, soy sauce or vegetable oil. Salt, or better, sprinkle the salad with the juice of a lemon wedge. For a light breakfast, nettle omelette is perfect. Break 2 eggs and mix them with nettle leaves, washed and finely chopped. Add salt to taste and pour the mixture into a hot skillet. Ready omelet can be decorated with greens.

To make cottage cheese with nettles, wipe 200 g of cottage cheese through a sieve or on a fine grater, and then mix this mass with one glass of finely chopped nettle leaves. Add 3 cloves of finely chopped garlic, 1 tsp. mustard and 3 tablespoons vegetable oil. This exotic vitamin "green cottage cheese" diversifies your menu.

Another interesting dish is nettles. Boil 100 g of nettle in boiling water for 2-3 minutes, fold it into a sieve or colander, and then grind it. Then mix 200 g of thick millet porridge with greens and make the meatballs. Bake in the oven and serve with any sauce that you like.
