Soak the mushrooms, while keeping in mind that after that they will increase in volume by about 10 times. Therefore, take the appropriate large pan with a lid. As a rule, 1 box of mushrooms absorbs 300 milliliters of water.

Pour mushrooms with warm boiled water. Let stand at room temperature for 2-3 hours under a lid. After that, you will see that there will be no water at all, and a huge pile of black shiny mushrooms will remain in the pan.

Now fill the mushrooms with ordinary cold water, close the lid and refrigerate for 20-24 hours.

After this, rinse the mushrooms, sort, cut off the place of attachment of the mushroom petals. Too large specimens cut into 2-3 parts. Put in a colander and leave the glass to water.

Dry Chinese mushrooms can be stored in a cool place. And the shelf life of soaked mushrooms in the refrigerator is 2-3 days, while they should be in a bowl with water covered with a lid.
