Roast the nuts for 10-15 minutes, stirring them continuously for uniform processing. If you want to get a darker color of the kernels and a more pronounced taste, extend the processing to 20 minutes. Remove the nuts with a slotted spoon and put them in a container covered with a paper towel so that it absorbs excess fat. If you want, add finely ground salt or spices to the nuts that have not yet cooled and mix thoroughly.

Do not process too many nuts in one go - they may not fry. Pour a thin layer of almonds into the pan. If you need to fry another serving, pour out the remaining oil, replacing it with fresh, otherwise the almonds may get an unpleasant aftertaste.
